Breakfast is hands down my favorite meal. But the rest of my family aren’t really breakfast eaters! That means the muffins, turkey bacon, scrambled eggs, and toast don’t happen very often. 🙂
My usual breakfast fare consists of cereal or oatmeal most days, with black coffee and possibly some fruit. But lately, I’ve been wanting something a bit different, just for variety’s sake, to help me power through my mornings.
I had some leftover granola, and several bananas up for grabs, and this is what happened! If you’re looking for something different and protein-filled for breakfast (or a snack!) look no further.
Power-Breakfast Bananas with Peanut Butter, Honey and Granola
1 large, ripe banana
2 Tbsp. creamy peanut butter or other nut butter
1/4 c. of your favorite granola
1 Tbsp. honey
Slice the banana lengthwise, and spread the peanut butter over each half as evenly as you can. (Anyone else find spreading peanut butter on bananas kind of hard?) Sprinkle the granola all over the banana halves, and drizzle all over with honey.
That’s it! I feel like I can hardly call it a recipe, but I’m glad to have this down in my arsenal of easy, filling breakfasts to refer to later when I feel stuck again in my cereal/fruit/coffee rut. 🙂
This week I made my own granola using a lightened up version of this recipe, which I’m hoping to post soon. When homemade granola is non-existent, I love both liveGfree and Udi’s brand granola. (I just tried the double chocolate crunch liveGfree… amazing. ❤ )
